Tortilla Soup

Yummy and as authentic tasting as you’ll ever get!   My family begs me for this.    Recipe is for 8; I usually double or triple it.

INGREDIENTS:

1 pound chicken1(15 ounce) can whole peeled       tomatoes, mashed1 (10 ounce) can enchilada sauce

1 medium onion, chopped

1 (4 ounce) can chopped green

chile peppers (or a real jalapeno)

2 cloves garlic, minced

2 cups water

1 (14.5 ounce) can chicken broth

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon salt  (or to taste)
1/4 teaspoon black pepper1 bay leaf1 (10 ounce) package frozen corn1 tablespoon chopped cilantro

**Tortilla chips – store bought or make your own by cutting corn tortillas into strips and frying them in oil

Shredded cheese (cheddar or Mexican variety)

*Lemons or limes  (juice would work as well)

*avocados

*sour cream

*hot sauce

DIRECTIONS:

1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker, or a large pot on the stove over low heat. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.  (Note: after approx 2-3 hours, shred the chicken, as it will be soft enough to come right off the bones).  Serve by placing crushed tortilla chips in bowl, then ladle soup over chips.*these garnishes can be added for the most authentic taste.** My kids like Fritos the best, or any other kind of tortilla chips work just as fineIt tastes even better the next day.    ¡BUEN PROVECHO!

    i got a ‘from scratch’ recipe from one of the women who worked at the Luz en Mi Camino Centro kitchen…i have not made it yet. but yummy stuff!

  2. My hubby (who is the one who cooks in our family) makes this. But our recipe only involves cans of things. It’s super easy to throw together at the last minute. I love Tortilla Soup!
